
CHEF LIAM MCNULTY
To see him in the kitchen, you might think that chef Liam McNulty, with his meticulous Don Draper haircut and wildly authoritative hand gestures, is a man who is all business. But the truth is that this 28-year-old is more like an infant with his toys when you put him around food. A self-trained cook, Liam has roamed the frontier seeking new ideas and amazing new flavours, and crossed the Rockies from his Albertan homeland to pursue his culinary passions. Amongst his work at such illustrious restaurants as Bibo in both Nelson and Osoyoos, Liam also became attached to the Spirit Ridge resort in Canada’s only desert. First helping to found the fledgling Passa Tempo restaurant at Spirit Ridge, he later moved on to head up its partner restaurant in the Nk’Mip Cellars Winery.
Liam’s food has been described as rustic and heartwarming with its family-style focus on rich, savory comfort meals. He sources all of his ingredients locally, and is typically found buried to the elbow in handmade dough. As such, his pasta is always fresh-made, his tomatoes direct from the vine, and his butter would be personally churned if he could only get the licensing to keep a cow in his apartment.
